Ingredients:
- whole grain tortilla (or substitute for rice)
- 3-4 Bell peppers
- 8oz Mushrooms
- 1 Broccoli crown (optional)
- Avocado oil or olive oil
- Spices: Salt and pepper, Chili powder, Paprika, Garlic powder, Onion powder, Cumin, Cayenne pepper (optional-depends on the amount of heat you like)
- Optional Protein: Chicken, Steak, Ground beef, or Pork (can go on the pan with veggies) or Vegetarian Protein: Lentils, Beans, or Tofu (cook seperately)
- Optional toppings: Avocado, Black beans, Tomato, Lettuce, Salsa, Coleslaw (get creative, or keep it simple – top it how you like it)
Directions:
- Preheat oven 350 degrees
- Cut up veggies, and meat (if using)
- Place on baking sheet and drizzle with oil & spices
- Bake for 15 mins, stir everything around and bake for another 15-20mins
- Enjoy in a wrap or on a bowl of rice!
