Pan Sheet Fajitas

Ingredients:

  • whole grain tortilla (or substitute for rice)
  • 3-4 Bell peppers
  • 8oz Mushrooms
  • 1 Broccoli crown (optional)
  • Avocado oil or olive oil
  • Spices: Salt and pepper, Chili powder, Paprika, Garlic powder, Onion powder, Cumin, Cayenne pepper (optional-depends on the amount of heat you like)
  • Optional Protein: Chicken, Steak, Ground beef, or Pork (can go on the pan with veggies) or Vegetarian Protein: Lentils, Beans, or Tofu (cook seperately)
  • Optional toppings: Avocado, Black beans, Tomato, Lettuce, Salsa, Coleslaw (get creative, or keep it simple – top it how you like it)
     

Directions:

  1. Preheat oven 350 degrees
  2. Cut up veggies, and meat (if using)
  3. Place on baking sheet and drizzle with oil & spices
  4. Bake for 15 mins, stir everything around and bake for another 15-20mins
  5. Enjoy in a wrap or on a bowl of rice!
