Ingredients
- 4 Carrots
- 1 spanish onion, diced
- 3 cloves of garlic, minced
- 1” ginger, peeled and minced
- 1 small head of red cabbage, diced
- 1 can diced tomatoes
- 1 cup cooked lentils
- 1 TBSP coconut oil
- 2 tsp Italian seasoning
- 1 tsp paprika
- 2 tsp cumin
- dash of salt and pepper
Directions:
- In a pot sautee onions and garlic in coconut oil, until translucent.
- Add carrots and ginger, cook for additional 5-10 minutes
- Add chopped up cabbage, salt and pepper and cook covered for 10 minutes.
- Add diced tomatoes, italian seasoning, paprika, cumin and simmer with a lid for 10 minutes.
- Mix in cooked lentils (according to package).
*Optional to add veggie broth to make a bit more like a soup
