Ingredients:
- 1 head of cauliflower (or 1 bag of frozen rice cauliflower)
- 2 Tbsp of butter, ghee or coconut oil
- 1/4 tsp salt
- 1.75 cup of unsweetened almond milk
- 1 tsp garlic powder
- chives or green onions, for garnish
Directions:
- If using a head of cauliflower, cut up into chucks and pulse into small pieces in a food processor. You can also use a cheese grater to shred the cauliflower. TIP: Use a frozen bag of the “riced” cauliflower to save time!
- Place butter or oil in a large skillet on medium-high heat. Once melted, add in the cauliflower, garlic powder and salt. Cook for approx 7 minutes until the cauliflower is a golden colour.
- Add almond milk and let the cauliflower cook for about 10 minutes (until all the liquid is absorbed).
- Mash the cauliflower mix together or place in a food processor/blender to smooth it out.
- Top with fresh chives or green onions, if desired. Enjoy!
