Ingredients:
- 1 large head cauliflower, chopped into florets
- 1/2 onion, sliced
- 4 cloves garlic, sliced
- 2 Tbsp lemon juice
- 2 Tbsp Extra virgin olive oil or avocado oil
- 2 teaspoons curry powder
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Directions:
- Preheat oven to 425F.
- Mix lemon juice, oil, garlic and spices in a bowl.
- Add in cauliflower and onions and toss until covered. If cauliflower is too dry add a bit more oil.
- Put the cauliflower and onion mixture on a baking sheet and roast for 20-30 minutes (until cooked).
