Zucchini Salad

Ingredients: 

  • 2 pounds of zucchini (spiralized or shredded) 
  • 1 tsp sea salt
  • 3 tbsp olive oil
  • 2 tbsp of lemon juice
  • 2 tsp mustard
  • ½ tsp black pepper
  • ½ small red onion, thinly sliced
  • 1 cup greens, thinly sliced (argular, lettuce, spinach, etc) 
  • ⅓ cup thinly sliced radishes
  • ⅓ cup slivered almonds 
  • ⅓ cup fresh basil (thinly sliced) 
  • ¼ cup of goat cheese or feta cheese

Directions: 

  1. Shave or spiralize the zucchini, discard the seedy core and put the zucchini in a colander inside a bowl, sprinkle with salt and let it drain for 30 mins. 
  2. Whisk together oil, lemon juice and spices for the dressing. 
  3. Once zucchini is drained, add to a bowl with radishes, onions and greens. 
  4. Mix dressing into bowl. 
  5. Top with almonds, basil and cheese. 
  6. Enjoy! – can be stored, covered and refrigerated for up to 3 days. 

*optional extra – toasting the almonds for a few minutes in a pan can add extra flavour
