Homemade Granola

Ingredients:

  • 1 1/2 cup oats
  • 1/2 cup chopped almonds 
  • 1/2 cup unsweetened coconut shavings 
  • 1/3 cup pumpkin seeds 
  • 1 tbsp flax seed
  • 1tbsp chia seed
  • 2 tsp cinnamon
  • 2 tbsp melted coconut oil 
  • 2 tbsp almond butter
  • 1/4 cup pure maple syrup
  • 2 tsp vanilla 
  • Pink Himalayan salt to taste 

Directions:

  1. Preheat oven to 325F.
  2. Combine all ingredients.
  3. Line baking sheet with parchment paper. Spread mixture on sheet and press.
  4. Bake for 40-45 min or until golden and appears crispy.
  5. Let cool completely. 
  6. Break apart into pieces.
  7. Store in an airtight container.
