INGREDIENTS:
CRUST
- 1.5 cups almond flour
- 2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 2 tbsp melted coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla
- 1/4 tsp salt
FILLING
- 1/2 cup coconut sugar
- 1 cup pumpkin puree
- 3 large eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
DIRECTIONS
- Preheat the oven to 350 degrees. Line 8×8 pan with parchment.
- Mix all crust ingredients together and evenly press into the pan.
- Bake for 10 min.
- Make the filling by mixing pumpkin and coconut sugar, add eggs one at a time until well combined. Add the rest of the filling ingredients and mix well.
- Remove crust from the oven, pour in the filling. Place back in the oven for 30 minutes.
- Let bars cool for at least an hour.
- Remove from the pan and cut into 9 servings.
- *Optional* top with coconut, nuts or whip cream!
